Le Cavalier
We were approached in 2018 to re-concept and re-design a storied restaurant in an historic AAA 4-star rated hotel that had operated continuously under its existing identity for over 100 years. This project is situated in an historic property and required complex approvals from numerous historical authorities and review boards.The resulting brasserie brought 250% growth in annual revenue and has been featured in Food & Wine, Eater, Forbes, and CBS Saturday Morning. It was named Best Hotel Restaurant by Historic Hotels of America and gained a spot on USA Today’s “Top Ten Hotel Restaurants in America.” Le Cavalier was repeatedly featured by outlets like Eater, Philadelphia Magazine, and the Inquirer in the context of feature articles placing Wilmington alongside Philadelphia as a dining destination, which was a primary goal of hotel ownership.
